I’ve been making this in cake form for years with just a bit of water. It’s great for those like me with egg allergies or those watching cholesterol. It works great with devils food cake mix too. Less of a pumpkin flavor.

After finding a box of spice cake mix in a cabinet I found this recipe and your wonderful blog. I’ll admit it, I was very apprehensive when I saw the lack of ingredients but what the heck I had no idea how long that cake mix was in there and the pumpkin pie filling was from Thanksgiving when I forgot to make my Hubs favorite pie. Like I said the lack of ingredients scared me, so I threw in a handful of raisins and chopped pecans. Into the oven went the first tray. As I waited the house started to smell pretty darn good. Off went the timer and i pulled them out. They sure don’t look like much. I let them cool. I ate one. Then I ate another one, and another one, and another one! They are an awesome cookie. I enjoyed them so much that I put the rest of the batter in baggies in the freezer so I can only eat one tray at a time Sweet Jesus! You Ladies have made a believer out of me, when You say “It Rocks” I will follow. They don’t need any frosting at all and I’m hoping that their less than spectacular appearance keeps my Hubs hands out of them. Of course I could just hide them in the cabinet I found the cake mix in. I know he won’t find them there. Thanks for your hard work. I’ll be checking with you often and for everything!
