Cucumber Tomato Chickpea Salad
 
 
Ingredients
Salad
  • 1 15-oz can of chickpeas sometimes labeled as garbanzo beans - rinsed and drained
  • 1½ cups peeled and diced cucumber
  • 1½ cups diced tomatoes
  • ½ cup finely diced red onion
  • ½ cup cilantro, minced
  • 2-3 tablespoons minced basil
  • 2-3 tablespoons minced mint
Dressing
  • 2 garlic cloves, mashed
  • 1 teaspoon salt
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard (I used country Dijon, it's my fave)
  • 2 teaspoons rice vinegar
  • 3 tablespoons extra virgin olive oil
  • freshly ground black pepper to taste
  • Topping!
  • 8 ounces feta cheese, crumbled
Instructions
  1. Combine salad ingredients.
  2. In a separate bowl, combine dressing ingredients.
  3. Just before serving, pour dressing over salad ingredients. Toss gently to combine.
  4. Top with feta cheese and garnish with fresh herbs.
  5. Yup, it's that easy! Enjoy.
