<p><span style="font-size: 18pt;">Hi all, Nancy here again from <a href="https://www.thebittersideofsweet.com" target="_blank" rel="noopener noreferrer">The Bitter Side of Sweet</a>. I really can&#8217;t believe it has already been a month since I posted these <a href="https://www.thisgrandmaisfun.com/fried-eggplant/" target="_blank" rel="noopener noreferrer">Fried Eggplants</a>!</span></p>
<p><span style="font-size: 18pt;">Where did my month go? Well I tell you, I spent most of the time behind a computer, but I did have a chance to do some traveling.</span></p>
<p><span style="font-size: 18pt;">We went up to Toronto for spring break with the kids, and it was fabulous! I had never been to Canada before so that was pretty cool.</span></p>

<p><span style="font-size: 18pt;">While we were there we had the chance to visit some of my husband&#8217;s family who were visiting from Italy! Our kids are bilingual so it was so good for them to be around their cousins hearing Italian all week!</span></p>
<p><span style="font-size: 18pt;">We also enjoyed some pizza together. We ordered out, but don&#8217;t tell anyone!</span></p>
<p><span style="font-size: 18pt;">Eating the ordered pizza inspired this pizza! I love adding sausage to my pizza and pairing it with peppers is the best combination! ENJOY!</span></p>

<p><span style="font-size: 18pt;">I don&#8217;t know about you, but I love the shape of the eggs in the McMuffin sandwich.  I&#8217;ve tried MANY different ways to achieve this, but in the end, the muffin pan method beats them all!</span></p>
<p><span style="font-size: 18pt;">Spray your muffin pan with cooking spray, and place a cracked egg into each compartment.  I really like these 12 muffin pans, but any muffin pan will do.</span></p>

The thing is, there are only three of us in the house and we always have TONS of leftovers.  So this year instead of the usual suspects like my <a href="https://www.thekitchenwife.net/2015/01/scalloped-potatoes-w-ham.html" target="_blank" rel="noopener noreferrer">Scalloped Potatoes with Ham</a>, my husband said why not make some Deviled Ham?  I had heard of ham salad, but never Deviled Ham. I did a little research and discovered that it is very similar to my <b>Southern Style Ham Salad.   </b>It&#8217;s perfect on sandwiches, crackers, so many thing.  The best part, you have everything you need for it in your fridge! <li><span style="font-size: 18pt;">2 Scallions, chopped</span></li>
<li><span style="font-size: 18pt;">2 Tbsp. fresh cut Parsley</span></li>
<li><span style="font-size: 18pt;">3 tsp. Sweet Pickle Relish</span></li>

<p><span style="font-size: 18pt;">I love a new year and a fresh start. I love to set resolutions and look ahead to where I want to be at the end of the year. So naturally I have been looking at health plans and weight loss solutions just like everyone else. I had a health food post all planned and ready to go, but then winter finally hit Utah.</span></p>
<p><span style="font-size: 18pt;">I&#8217;m from Arizona where winter just meant we had to wear a sweatshirt with our shorts and sandals. I&#8217;m usually really homesick during Utah winters, but so far this mild winter has made me feel right at home&#8230; until Christmas day. The snow finally hit, and it hit hard. Even this Arizona girl could appreciate our beautiful white Christmas, but the snow just kept coming! Then the temperatures plummeted and I found myself in a frozen wasteland.</span></p>
<p><span style="font-size: 18pt;">It was 3 degrees when I woke up this morning. THREE. That&#8217;s simply not enough degrees. Obviously this is soup weather, so I changed my whole post to this delicious corn chowder. I pulled out the last of my leftover Christmas ham and threw together a hearty soup that everyone loved.</span></p>

Drain it, crumble it, and set it aside.</div></li><li id="wprm-recipe-39192-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In a stockpot, melt butter over medium heat. Add the onion and garlic and stir frequently until the onions become translucent.</div></li><li id="wprm-recipe-39192-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Stir in the corn and thyme and cook for 1-2 minutes. The thyme should really start smelling good now.</div></li><li id="wprm-recipe-39192-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Whisk in the flour and let it cook for at least a minute or two until it browns slightly. If you don't cook it for a bit, your soup will taste like flour. Yuk. Then whisk in the milk and cook until slightly thickened. Keep whisking it so it doesn't burn to the bottom of the pan.</div></li><li id="wprm-recipe-39192-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Stir in the potatoes and bring it to a boil, then reduce the heat and let it simmer for 12-15 minutes until the potatoes are tender.</div></li><li id="wprm-recipe-39192-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Stir in the ham, sour cream, and cheese. If the soup is too thick, add some milk until it's how you like it. Then salt and pepper to taste. You can stir in the bacon or add it as a garnish to each bowl. Serve immediately.</div></li></ul></div></div>

It went from &#8220;meh&#8221; to &#8220;my oh my.&#8221; This ham and potato chowder is the perfect tasty dish to warm you up on a chilly night &#8211; or a ridiculously frigid night like we&#8217;re having here in Utah.</span></p>

<p style="text-align: center;"><span style="font-size: 18pt;">This recipe is so tasty you are going to make a pig of yourself. Not because you are what you eat. No, because you are going to want to devour every yummy bite. Each morsel of ham is coated in brown sugar glazed, moist goodness. It has the perfect blend of salty, sweet meat.</span></p>
<p style="text-align: center;"><span style="font-size: 18pt;">And tender? It fell of the bone! It shredded with a fork! You may feel that I am overusing exclamation points, but I really feel strongly about this ham. I might be in love. And not the infatuated, twitterpated kind of love. The long lasting, real deal. I made this for Easter last year. I have been waiting all year to make it again. I didn&#8217;t make it until Easter. I just couldn&#8217;t wait.</span></p>
<p style="text-align: center;"><span style="font-size: 18pt;">You, dear reader, are my excuse. I did it for you. I made ham for dinner, and it was not a holiday. This ham won&#8217;t wait for holidays. You will want to make all year long. And every day for the rest of your life.   I have never had ham like this.  It is the most unique way of making ham, E-V-E-R!</span></p>
<p style="text-align: center;"><span style="font-size: 18pt;">And the leftovers. Even people who don&#8217;t like leftovers will be happy to eat this for days. Delicious in biscuits, casseroles, soups, and omelets. All of which doesn&#8217;t really matter, because there won&#8217;t be any leftovers. Unless you are like me and make an entire ham all for yourself and eat it every way you can think of.</span></p>

Bring to a boil and cook at a vigorous boil for 2 to 3 hours. You will know when it is done because it will shred easily and fall off the bone. Once the water is boiling, turn down the heat to medium Watch your temperature to make sure you keep it at a boil, but not splashing out of the pot. Take care to check the meat at two hours so you do not overcook the meat. If it does not shred easily, continue boiling.</div></li><li id="wprm-recipe-39492-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">After the meat is cooked, remove the ham from the pot. Dispose of the leftover water. Let the meat cool enough that you can handle it to shred it. The meat should fall off the bone. Throw out the fat and the bones. Spread half the meat in a 9X13 baking dish. Mix together the brown sugar and dry mustard. Scatter half of this mixture over the ham. Lay the rest of the ham on top and cover with the remaining brown sugar/ dry mustard mixture. cover the dish tightly with foil and bake at 325° for 1 hour. Remove from oven, take off the foil and mix all meat around until it is coated in the juices and brown sugar mixture. It is ready to serve. Enjoy!</div></li></ul></div></div>

It is my dad who didn&#8217;t like ham all that much, so we didn&#8217;t have it often growing up. I look forward to Easter Ham dinner. We had friends and family with us for dinner this year, and it was so much fun. My husband was worried there would not be enough. We had plenty. And then some.  It seems to me that when you purchase a ham it really only comes in one size, huge.  There are lots of recipes for leftover turkey, but not many for leftover ham.  Unless you like split pea soup. I don&#8217;t know if I do. The minute I got home from our visit, I ran to Williams Sonoma and got myself a panini press. It has become one of my favorite kitchen appliances. Once a week I take a night off from making dinner, and we have panini night. I was right, this is a great combo for a pressed sandwich. It is a healthy, flavorful, casual weeknight meal for a family or a quick lunch for one. I love the combination of a crunchy exterior and soft interior. Carefully flip sandwich returning to pan, cover pan with lid, and cook opposite side until bottom is golden brown and cheese has melted about 2 - 3 minutes.</div></li><li id="wprm-recipe-39906-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve warm.</div></li><li id="wprm-recipe-39906-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">*Note from Cooking Classy - I put quality ham because I used leftover spiral sliced ham that I had placed in the food processor then processed several seconds until chopped into very small pieces (I always do this with leftover ham and freeze it. It's great for salads, sandwiches, eggs and many other entrees. This recipe is a great use for that leftover spiral sliced ham this upcoming Easter).
