Cheesy Chipotle Cornbread Muffins

Serve these Cheesy Chipotle Cornbread Muffins with your favorite bowl of chili or next backyard BBQ bash!

Ingredients
  

  • 1 cup ground yellow cornmeal
  • 1 cup all purpose flour
  • 2 tbsp sugar
  • 1 tsp salt
  • 1.5 tsp baking powder
  • 1 large egg slightly beaten
  • ½ cup buttermilk liquid
  • ½ cup milk
  • 6 tbsp unsalted butter melted
  • 4 canned chipotle pureed peppers
  • Butter for spreading on muffins

Instructions
 

  • Preheat oven to 400º F
  • In a large bowl, stir together cornmeal, flour, sugar, salt and baking powder. Fold in the beaten egg, buttermilk, milk, butter and pureed chipotle peppers
  • Spray muffin tins with non-sticking baking spray and fill each slot with 3/4 batter
  • Bake for 25-30 minutes or until a toothpick comes out clean
  • Spread with butter and serve warm
