White Bean, Sausage, and Kale Soup Recipe

A simple and flavorful soup that is filling without being too heavy. Perfect for those cooler, early spring nights.
Servings 6 -8 servings

Ingredients
  

  • 1 lb. of Smoked Sausage sliced
  • 2 15 oz. Cans of Cannellini Beans drained and rinsed
  • 1 Bunch of Curly Kale stemmed and chopped
  • 1 Onion diced
  • 8 c. Chicken Stock
  • 1 tsp. Dried Thyme
  • 1 tbsp. Extra Virgin Oil
  • Salt & Pepper to taste

Instructions
 

  • Place a heavy bottomed pot over medium/high heat and add the oil.
  • Once the pan is hot, add the diced onion and cook 1-2 minutes, until soft and translucent.
  • Add the sliced smoked sausage to the pot and let brown, 3-5 minutes.
  • Add the beans and thyme to the pot. Stir and let cook for 1-2 minutes.
  • Add the chicken stock to the pot.
  • Bring to a boil and let simmer for 20 minutes.
  • Add the kale and let simmer another 5-7 minutes.
  • Taste for seasoning and make any adjustments.
  • Serve and enjoy.
