Hi Angela,
When we are in a pinch I tend to fall back on breakfast for dinner, or frozen food from Costco! And whenever I am making something that would freeze well, I make double and put it in the freezer. I make Italian Skillet Chicken and Mediterranean Skillet Chicken all the time, because it is so fast and easy.
Hope this gives you some inspiration!

I did make the soup using ground beef and beef broth. I did miss the creamy texture but it tasted great!! I opted for the Rotel tomatoe as well. The next time, I will used a can of creamed corn instead of regular corn. The cream of mushroom soup with the other flavors doesn't work for me. I just love this recipe because, truth be told, I hate beans and most veggies. Since they're so good for me I try to do whatever I can to get them in my body! I love that this soup is so flexible!!

Haven't heard of anyone trying beef. But I agree with you, I can't imagine it would taste bad. So glad to hear you like the original. Maybe cream of mushroom soup would be good with beef. That way you would still get the creamy texture. I would love to hear how it turns out when you try it. Sherri (The Baby of the Family)

I made this soup New Year's Eve for a group of 4.I used about 3 TBSP of dried onion flakes just because we love onions! I also used 2 small cans of fire roasted green chile's instead of the green enchilada sauce. The green chile's cost about 89cents a can(and were already in my pantry) and the enchilada sauce was about $4 at the grocery store where I stopped to grab a packet of taco seasoning. It literally took less than ten minutes to put it together and then I let it simmer about 15 minutes (just to make sure it was good and hot..and also to give the dried onions time to soak up some of the liquid.)

Hey Deb. I think low on 3 hours should do it. The ingredients are all cooked, so it just needs to be heated through. Enjoy!

This soup is delicious! I made homemade cream of chicken soup using a fabulous recipe from www.salad-in-a-jar.com. I also made homemade taco seasoning. (Two less cans for me, but still so easy!)

Thank you for sharing a soup that I will definitely make again.

Glad you and your husband will be able to enjoy this recipe, Helen. One of the reasons I like it is it tastes fresh and not so canned soupish, even though it is canned! I liked a little cilantro in mine, but I like cilantro on everything. Hubby not so much:) Thanks for pinning!

That sounds like the way to go, Jenn! You could also try putting the frozen chicken and the other ingredients in the crock pot. That is another way for this recipe to be a great time saver. So glad to have another friend across the pond!

It would depend on the strength of your seasoning mix. I would do it to taste, starting at about 2 tablespoons. I am impressed! You sound like a real make it from scratch officionado! I think you will be pleased with this recipe, Jocelyn. Many happy, stress free family meals to you.

This looks like a tasty lifesaver! Do you happen to know how many teaspoons are in a packet of taco seasoning? I always make my own. Also, when I make this I think I'll be brave and make my own cream of chicken soup too; I've read that it's easy to do. Thanks so much!

I would say 4. Depends on your appetite and if you have any sides. No sides, 4 people, we had no leftovers. Donna with 6 kids and 2 adults doubled it and had no leftovers. Can't wait to hear how you like it, Cindy.
