Thanks for your comments! The reason most if not all of the recipes for baked potato soup do not used baked potatoes is texture! With this recipe some of the potatoes break down and mix in with the cream and others remain in bite sized soft chunks. With a potato that has been baked, the whole potato would break down and your soup would end up without the bite sized chunks. Let us know if you make and like the recipe 🙂

This soup looks delish! I had a baked potato soup at a very nice diner 2 weeks ago, and was so obsessed with the idea that I made one this weekend, only I did not follow any particular recipe and used real baked potatoes. And then I saw a bunch of recipes that are called baked potato soup and none of them used baked potatoes or involved any baking at all. Why do you think is that? 🙂
In any case, baked or not, I am sure your soup tasted amazing! Great recipe!
