Hi Tricia! The vinegar will be absorbed into the macaroni and there won’t be anything to drain. I have made this plenty of times without the vinegar and I think I kinda like it better so it will be up to your taste!

It does make a lot. It’s hard to calculate based on what size of serving each guest takes! But I would say it easily feeds 12-15. Although I have been known to double it because it goes fast!

Hi Marti! Thanks so much for your sweet comment! With my daughter being Tongan and her husband being Samoan, we LOVE polynesian recipes around here! Two weeks ago we had a BBQ and I made TWO batches of this salad and there wasn’t ONE noodle left! haha
