I have not tried adding veggies, but think it would be a welcome addition. I would put them in low, around the roast. They tend to take longer to cook, and make sure your roast is not sitting on top of the liquid. If the roast is above the liquid, it will dry out. Let me know how it goes!

thanks for the reply! I went ahead and bought another roast to go with this so it will be around 2 lbs together so just scale seasoning back a little and it should be great 🙂 I am going to be assembling freezer meal bags and this recipe sounded great! Needed something fast easy and obviously tasty!

Absolutely, Sonya! Chuck roast will be a little more tender because a rump roast is more lean, but it will still taste delish! Enjoy.
