This sweet barley salad is the perfect autumn inspired side to your turkey dinner.

Hey everyone, it’s Amber from rick•a•bam•boo. Today I am going to share a delicious salad with you that would be a wonderful addition to your Thanksgiving table. A few years ago my mom found this recipe on Miss Mustard Seed and knew that we needed to try it.

Sweet Barley Salad Recipe

It is a fairly simple salad but it packs a lot of flavor and texture.  It’s sweet and chewy and fruity and totally yummy.

The barley is the trickiest part. I know that last year I bought a quick barley but I couldn’t find this at the store this year. So just cook the barley according to your instructions.

Sweet Barley Salad, yummy with great flavors, makes for a perfect chilled salad.

Course Salad
Servings 6 - 8

Ingredients
  

  • 2 cups cooked barley chilled
  • The seeds of 1 pomegranate
  • 3/4 cup mini chocolate chips
  • 1 cup walnuts roughly chopped
  • Maple syrup

Instructions
 

  • Mix all the ingredients, except maple syrup, in a bowl.
  • Dress salad with a drizzle of maple syrup.

Notes

We like to leave the salad plain and dress our own servings.

Sweet Barley Salad Recipe

You can make this ahead of time and put it in the fridge.  It is meant to be a cold salad. My mom and I like to eat it for breakfast. Or for dessert. Or for snack. We just love it.

It is a great addition to your holiday dinner and it won’t take up any of your time the day of. And all of us cooks know that the more things we can do before Thanksgiving day the better.
