Ingredients
Salad

can of chickpeas sometimes labeled as garbanzo beans - rinsed and drained

peeled and diced cucumber

diced tomatoes
1/2
cup
finely diced red onion
1/2

cilantro
minced

tablespoons
minced basil

tablespoons
minced mint
Dressing

garlic cloves
mashed
1
teaspoon
salt

tablespoons
freshly squeezed lemon juice

teaspoon
Dijon mustard
I used country Dijon, it's my fave

teaspoons
rice vinegar
3
tablespoons
extra virgin olive oil
freshly ground black pepper to taste
Topping!
8
ounces
feta cheese
crumbled
Instructions
Combine salad ingredients.
In a separate bowl, combine dressing ingredients.
Just before serving, pour dressing over salad ingredients. Toss gently to combine.
Top with feta cheese and garnish with fresh herbs.
