Hey y’all! It’s Marye from Restless Chipotle and it’s time for me to share a favorite recipe here on Made From Pinterest! Today I have a family favorite – No Bake Oatmeal Fudgies Cookies. Rolled oats, peanut butter, peanuts, and cocoa are combined with a few other things to create a rich, chocolaty cookie that is almost candy. They always disappear fast!
My son, Ethan, is home on leave. I think I’ve said before that I have three sons and a daughter-in-law in the military. Ethan has spent the last six months on the Iwo Jima and then got his two weeks leave time. I don’t know about y’all but when my kids come home I try to cook all of their favorites. Let’s face it, no one cooks like Mom.
One of E’s favorites is these easy, no-bake oatmeal fudgies. Before he left for the Navy he used to make them once in awhile and he got pretty good at it. I wanted to make sure that these got made at least once. There’s no real reason not to make them — they are just the easiest things ever. You boil sugar, evaporated milk, and butter in a pan for three minutes, add the rest of the ingredients, and spoon them onto waxed paper. You can even just press them into a 9″ x 13″ pan and make bars out of them. I have no clue where they got started but I am sure glad they did.
The recipe has been around forever.
These things are totally ugly and it is really hard to make them look as good as they taste. I added a teaspoon of peanut butter to the top, froze the cookies, and then poured some magic shell over the top so it was a little like an oatmeal cookie and a buckeye candy fused into one bite of amazing.
It totally made these oatmeal fudgies look better. You can choose to do that or just leave them plain — they’ll still be delicious. One warning, these tend to crumble so they are not great to pack in lunches or ship anywhere.
- 2 cups sugar
- ½ cup unsalted butter
- ⅔ cup evaporated milk
- 3 tablespoons cocoa
- 1 tablespoon vanilla
- 1 cup peanut butter
- 1 cup chopped peanuts
- 1 cup milk chocolate chips
- 4 cups old fashioned rolled oats
- Bring sugar, butter, and milk to a rolling boil.
- Boil for 3 minutes stirring constantly.
- Remove from the heat and stir in the remaining ingredients quickly.
- Drop by tablespoons onto waxed paper.
- Cool completely.
- Store at room temperature.
- Once the cookies are cool add a ½ teaspoon of peanut butter to the top.
- Freeze for 2 hours.
- Spoon Magic Shell over the top.
- Keep refrigerated.
