Strawberry Mango Salsa!

I’ve never thought of salsa as beautiful, until I saw this picture! I love how the colors worked together.

I cannot tell a lie, I have never made my own tortilla chips before. So I was not careful about how long these were in the oven. I forgot about them until it was too late. What you see on the pan are what they looked liked BEFORE they went in the oven. By the time I remembered and ran to get them out of the oven, they looked like scorched little hockey pucks!  I was so disappointed that I threw them in the trash and forgot to take a picture!

Since I ruined the homemade chips we had to use some regular bagged chips. The “salty sweet” taste worked just fine. But I think the salsa would have tasted even better with the cinnamon tortilla chips.

This would be great over grilled chicken breast or fish. It turned out to be a very versatile salsa.

Strawberry Mango Salsa

Ingredients
  

  • 3/4 Cup Strawberries finely diced
  • 3/4 Cup Mangos finely diced
  • 1/4 Cup Red Onion finely chopped
  • 6 Basil Leaves finely chopped
  • 1 TBSP Fresh Lemon Juice
  • 1/4 tsp. Sea Salt
  • 1/4 tsp. Black Pepper

Instructions
 

  • Combine all ingredients and allow to sit in the refrigerator for a few hours, covered.
