Slowly but surely my family and I are settling into our new life. We’ve taken to exploring our new surroundings and are steadily finding our way around. It’s vastly different from our old home though and the strain is starting to show. Although we’re still excited about the move and the endless possibilities that have been presented to us, it’s still a big change for all of us. While hubby is away at work most of the day, it’s up to me to keep the little ones busy and to take on the bulk of the moving anxiety that has started to show up over the last few weeks.
As my readers already know, I love to cook. Whether I’m baking up goodies for dessert or making a recipe from scratch for family dinner, there isn’t anything that I don’t love tackling in the kitchen. This is especially true since we’ve moved. My family has had a case of the moving blues so lately I’ve taken to creating comfort food dishes. Nothing gets rid of gloominess better than comfort food, this is something I’ve known for years and that has helped on numerous occasions in the past. There truly is nothing like comfort food to sooth any ailment.
In light of the moving blues, I decided to scour the internet for a dish that my family would not only enjoy, but would also fit into the comfort food category. When I came across the recipe for Creamy Chicken Pasta, I was sold. Nothing says comfort quite like a pasta dish. In fact, in the past when I’ve gone in search of comfort foods, 90 percent of them fell into the pasta category. So, when I saw the headline for Creamy Chicken Pasta, I knew I had to save the recipe and recreate it for my family. After all, how could you possibly go wrong with creamy pasta and chicken?
Creamy Chicken Pasta
- 1 can Cream of Chicken and Mushroom Soup such as Campbell's
- 1/2 cup milk
- 1/8 teaspoon ground black pepper
- 1/3 cup grated Parmesan cheese
- 2 cups chopped chicken cooked
- spaghetti noodles cooked and drained
- 1 tablespoon chopped fresh parsley
- Cook the noodles per package instructions and brown the chicken until cooked through
- In a large saucepan, add the soup, cheese, chicken, noodles, and pepper and heat until bubbling
- Top with parsley and serve!
