Ok so we have a big family favorite recipe today but it goes by a few names.  In our family it is our Snowball Cookies Recipe.  It is also known as Mexican Wedding Cookies and also Russian Tea Cakes.  No matter what you call them it’s not Christmas until our family makes these.

Snowball Cookies Recipe. It's not Christmas around our house until these cookies get baked. With a great nutty flavor sprinkled with powdered sugar, they will soon become a family favorite for you too.

With a wonderful nutty flavor sprinkled with powdered sugar these never last for long. Which is why it might be good to double the batch.   Here we go!

Snowball Cookies Recipe

Ingredients:

1 cup (2 sticks) unsalted butter, softened
½ cup powdered sugar
1 teaspoon vanilla extract
¼ teaspoon salt
2 ¼ cups all-purpose flour
½ cup pecans, finely chopped
Powdered sugar for coating

Instructions:

Preheat oven to 400 degrees F
Line baking sheet with parchment paper or silicone mat
In a large bowl, beat together butter, ½ cup powdered sugar and vanilla until well combined


Mix in salt and flour until well combined


Stir in nuts


Shape dough into 1 inch balls and place on prepared baking sheets


Bake for 10-12 minutes or until lightly golden brown
Remove from oven and cool slightly, about 2-3 minutes, on a wire rack
Add powdered sugar to medium bowl.

Roll cookies in powdered sugar and place on wire rack to cool completely

Store in airtight container.
