										<content:encoded><![CDATA[<p>I love food. All kinds of food. One of my favorite kinds of food, is down-home, southern cooking. This two-two easy peach cobbler is as simple to make as it is good. And it doesn&#8217;t even have to be the peach season.</p>
<p>We first published this recipe in July of 2015 and I just have to bring it out again. It is awesome for dutch cooking when you go camping this summer. Like Ah-mazing! But at home, my favorite is the cast iron skillet. Seriously good stuff.</p>
<p>Do you know what is completely awesome about this recipe? It is super versatile. Add cinnamon, nuts, serve it with ice cream, and it is all good. Do you have fresh peaches? That works, too.&nbsp;</p>

<h3>Little Known Facts About Peach Cobbler</h3>
<p>As the name implies, it requires two of everything (except peach) to prepare it.&nbsp;</p>
<p>Peach Cobbler is a dessert consisting of canned peach (or less commonly fresh peach fruit) filling, poured into a large baking dish and covered with a batter, before being baked. Some of the recipes, especially in the American South, resemble a thick-crusted, deep-dish pie with both a top and bottom crust. It is part of the cuisine of the United Kingdom and the United States, and should not be confused with a crumble.</p>
<p>As seen <a href="https://en.wikipedia.org/wiki/Cobbler_(food)" target="_blank" rel="noopener">here</a>, the general cobbler recipe originated in the British American colonies. English settlers could not make traditional suet puddings due to lack of suitable ingredients and cooking equipment, so instead covered a stewed filling with a layer of uncooked plain biscuits, scone batter, or dumplings, fitted together.</p>
<p>The origin of the name&nbsp;<i>cobbler</i>, recorded from 1859, is uncertain: it may be related to the archaic word&nbsp;<i>cobeler</i>, meaning wooden bowl. The term may be due to the topping having the visual appearance of a cobbled stone pathway rather than smooth paving.</p>

<p>Before anything else, preheat the oven to 350 degrees Fahrenheit. This is the temperature that allows for browning and ensures it gets all the glorious flavors.</p>

Every year, we go away for the weekend and sort of tip our hats to the last of summer. It’s bittersweet. And a little bit hectic as we try to get everything done to get ready for school, and at the same time, getting everything ready for the last hurrah. Usually there are summer assignments getting finished in the car on the way to the lake.  And there is always something we have forgotten. But we have found that wadded up beach towels are a fine substitute for a pillow.</span></p>

<p><span style="font-size: 18pt;">One part of summer I don’t want to forget is the sweet taste of ripe peaches in season. This recipe is my last hurrah to peach season. I am tipping my hat to the pretty fruit with this recipe I have had my eye on since last year. It was worth the wait, and worth you hurrying to enjoy the last bit of peaches at the tail end of the season. This terrific recipe from the <a href="https://www.thelondoner.me/2012/07/honey-roast-peaches.html" target="_blank" rel="noopener noreferrer">Rosie on the Londoner</a> is simple, classic, with complex flavors that will have you eating both halves of the peach. If you prepare these as a dessert after a filling dinner, perhaps one half per person would be enough. But I prefer to make a meal of them, and a pig of myself, and indulge in the whole peach with a healthy dollop of cream. Cut the peaches in half and remove pits. Place in a baking dish. I used a cast iron skillet.</div></li><li id="wprm-recipe-39341-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place a pat of butter on each peach half and drizzle with honey.</div></li><li id="wprm-recipe-39341-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bake for 25-30 minutes. Make sure to keep an eye on them so they brown but don't burn. The time is dependent on the size of your peaches.</div></li><li id="wprm-recipe-39341-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">While they are baking and browning, mix your cream, mascarpone and vanilla extract. Lightly toast almonds in pan.</div></li><li id="wprm-recipe-39341-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When your peaches are baked and browned remove them from the oven.</div></li><li id="wprm-recipe-39341-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place peach on plate. Spoon remaining butter and honey in pan and pool over the peach. Place a heaping spoonful of marscapone cream on peach and top with almonds and cinnamon sugar.</div></li><li id="wprm-recipe-39341-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve and enjoy!</div></li></ul></div></div>
