Here is a detailed list of the gift we’re giving.   Just a few of my favorite things from Charming Charlie’s.  I REALLY want to keep this watch!

I love to bake more than I love to cook and PAM  Cooking Spray makes my baking easier.  With the holidays fast approaching, I thought that I would share with you some of my favorite holiday dessert recipes.   The Fantasy Fudge is a secret family recipe and my family says that it just isn’t the holidays without it.  The Cherry Bars are a beautiful red which goes so perfect with the Christmas Season.  The Mini Pumpkin Pies and the Pumpkin Bars work well from October all the way to December.

All of these holiday foods recipes will require a cooking spray which of course, NEEDS to be PAM Cooking Spray.  I love how well PAM Cooking Spray covers and that it  leaves *99% less residue than margarine or bargain-brand cooking sprays too. (* vs. leading cooking sprays (except olive oil), after spraying on glass bakeware, baking at 400°F for 30 min, cooling, and then washing in standard home dishwasher with detergent and repeating 4 times).  My dishes turn out great and I spend less time cleaning up.

So let’s start off with the Mini Pumpkin Pies.  I used both a regular sized muffin pan and a mini muffin pan. After spraying with Pam, these darling little pies are so easy to remove.

Mini Pumpkin Pies

Ingredients

• PAM Cooking Spray
• 4 9 inch premade pie crust dough, found in the refrigerated section
• 1 large can of pumpkin pie mix
• 2 eggs
• 2/3 cups evaporated milk
• Whipped cream

Instructions

• Preheat oven to 425 degrees
• Blend together the pumpkin pie mix, 2 eggs and 2/3 cups evaporated milk.
• Unwrap and unfold the premade pie crust and with either a cookie cutter or some other round item, (I used a glass bowl) cut out your circles. For the regular size muffin tins, I used a 4" circle and for the mini muffin pan, I used about a 2 1/4" circle.
• Spray your muffin pans with PAM Cooking Spray. Place the dough inside and poke the dough at the bottom with a fork so the pumpkin mix doesn't boil over.
• Pour the pumpkin mix into the pie shells. Fill close to the top.
• Bake at 325 for 15 minutes then reduce the heat to 350 degrees. Bake the mini pumpkin pies for an additional 10-15 minutes and the regular sized muffin pies for an additional 15-20 minutes.
• Let cool and top with whipped cream when completely cooled.

These Cherry Bars are sure to be a hit if you do any entertaining or even if you are just making these for your family.  One of the great these about these bars is that you use a can of cherry pie filling so you don’t have to worry about cherries being in season. And the beautiful red color looks so festive!

Ingredients

• PAM Cooking Spray
• ½ cup butter softened
• 1 cup sugar
• ½ tsp salt
• 2 eggs
• 1 tsp vanilla
• 1 ¾ cup flour
• ½ tsp baking powder
• 1 can 21 oz. cherry pie filling

Instructions

• Preheat oven to 350 degrees
• With some heavy duty aluminum foil, line an 8x8 pan with the foil.
• Spray with PAM Cooking Spray.
• Cream together butter and sugar until creamy.
• Add salt, eggs, and vanilla and beat until well blended.
• Add your flour and baking powder. Mix until just blended.
• Set aside 1/2 cup of the dough.
• Press the large portion of the dough into the sprayed pan.
• Pour your cherry pie filling on top.
• Drop the 1/2 cup of reserved batter over the top of the pie filling by spoonfuls.
• Bake for 50-60 minutes or until golden brown.
• Place on wire rack to completely cool.

My mom is locally famous for her fudge.  As I said earlier, my family claims that it will absolutely not feel like the holidays without Grandma’s Fantasy Fudge.  Just in case you need some help getting into the holiday spirit,  here’s our family fudge recipe for you!

And last but not least, another family favorite is our Pumpkin Bars with Cream Cheese Frosting.  This recipe is made in a jelly roll pan so it’s great for when you need to feed a crowd.  I can’t remember how many times we brought these bars to high school functions and dinners when my kids were younger.  It is moist and flavorful and plus, come on, who doesn’t love a cream cheese frosting.

As you can see, PAM Cooking Spray makes my life in my kitchen easier.  Easier everyday but especially easier during the holidays.  PAM Cooking Spray can make your life in your kitchen easier too.

Do you love red, white and blue?  I absolutely love decorating my house for a patriotic holiday.  We aren’t big fireworks people, (that’s a story for another day!) but I love seeing all the red, white and blue decorations for a patriotic holiday.

And with my Minc Foil Applicator from Heidi Swapp, it is easy to get big bold red, white and blue color for projects like this!   Look how stunning and rich these foil colors are.  I’m in love!

In order for the Foil Applicator to work, you just need to print anything you want (is that cool or what?) from a laser printer.  I don’t have one of those at home so I purchased these papers from Creative Market and took them to my local print shop to have them copied off on to some card stock.  Voila!  Super easy.  I then put them through the applicator to bond the foil to the paper.  (To learn how to use this machine, see directions HERE.)

Heidi’s Minc Foil Applicator can be found at Michael’s, JoAnn’s and also online.  Seriously.  Do you have a birthday coming up?  Then go and treat yourself to one of these machines.  You are even going to want to foil your toilet paper.   Ok maybe not.  But you are going to want to foil everything else!

To make this paper wreath you will need:

1. 12″ floral foam wreath.  I could only find a green one and I didn’t want any green showing through my red, white and blue papers, so I quickly spray-painted mine white.

2.  Elmer’s Craft Bond Spray Adhesive

3.  Card stock paper either printed and foiled or you can also use pre-printed papers.

4.  Scissors or a paper cutter

INSTRUCTIONS:  After foiling your paper, cut them into strips.  I cut mine about 1 1/2″ by 10 inches, but if you’d like longer strips, you can definitely cut them a little longer.

After cutting, spray both ends with the bonding spray and then wrap it around your wreath, lining up the edges together.

If one end is slightly wider than the other, make sure the wider end is on top so you don’t have any white from the back of the paper showing through.  Press to seal.

Continue on around your wreath until you are satisified with the coverage of the wreath.  Then you will want to cut a “v” shape into the ends:

That’s it!  Now you’re ready to hang this stunning wreath for the holidays.   (Prepare to receive compliments.)  Everyone ALWAYS wants to know how I foil my projects.  There are other ways, but this Minc machine is by far the easiest.

I don’t do it very often, but I really enjoy water coloring. I love the relaxation it gives me and the effects I can get with just color and water. So when I saw this Slow Down, Enjoy Life printable I was inspired. I loved the way the font paired with the flowers. And although it isn’t watercolored, it made me think about watercoloring.

So I pulled up Illustrator and chose a fun quote and left LOTS of white space around it. Then I pulled up a photo of shamrocks, and started sketching a few around my quote.

When I was satisfied with my sketch, I pulled out the ink, water, and brushes and started painting. After drying I added in some quick little details with a marker, and it was done!

I love that it was pretty quick, but I still was able to come up with something I love for the upcoming St. Patrick’s Day season.

It was so much fun, that I thought I’d like to share it with you. So I turned it into a free 8×10 printable you can share or keep for yourself.

This FREE printable is the perfect way to kick off your holiday decorating spree, since it’s a phrase from just the right song to put you in the Christmas spirit:  “It’s Beginning to Look a Lot Like Christmas”.

I love incorporating natural elements into my holiday decor, so it was fun to add this printable to the mix.  Pine cones are plentiful in my neighborhood.  Snow is not…..so I had to add a few snowflakes with fabric and ceramics!

Pine cones of different varieties can be found all over North America.  It’s pretty unusual to live in a city that doesn’t have at least one spot where you can gather them.  If you are able to gather a few of your own, there are some really fun ways you can use them to create inexpensive decor or gifts.  I spotted these three ideas on Pinterest:

 Do you have some standout memories of Thanksgiving? Aren’t some years more memorable than others? For us, one of the most memorable was the year of the crazy turkey legs. My brother-in-law is a bonafide redneck hunter. He provided two wild turkeys for our holiday meal. Luckily he had them all prepared and ready to cook or I would NEVER have agreed to it. Here they are! Notice anything strange? They are not in a traditional roasting pan? Not even a 9X13? Take a look at the legs. Notice how lean and long they are? They were so long, no lid would fit over them. I ended up cooking them in foil pans, covering them with foil. But that was not what creates the standout memory! It was that I had to make holes in the foil for the legs, they stuck out so far! Maybe you are thinking these are standard size aluminum pans? Nope, they are the big roasters. Still the legs wouldn’t fit. It was the only way we could think of to cook them. It tasted different than a Butterball, but it was a terrific meal full of family and fun. Everything it should be. I will never forget that year and it is one of those memories that gets brought up at family “Remember the time?” type gatherings.

Whether you are making wild or traditional store-bought turkey this year, you will most likely have leftover turkey. There are a lot of casseroles out there for leftover turkey. This Turkey and Wild Rice Casserole is my favorite. I have made it so many times, I have tweaked to our family’s version of perfection. It is elegant enough to serve guests. It has a perfect blend of holiday flavor . It can be frozen and baked up later. I have served this at holiday church functions and had to make handouts so everyone could have the recipe, it was so popular. But don’t wait for leftover turkey. Chicken works just as well.

May your legs be long and lean this year, rather than your turkey legs. And may your memories of this year’s celebration be filled with joy.

Turkey and Wild Rice Casserole

Author adapted by Southern Living Do Ahead Cookbook

Ingredients

• 1 6 ounce package long grain and wild rice mix
• 1/2 pound sausage I used Jimmy Dean
• 1 cup diced fresh mushrooms
• 1/2 cup diced celery
• 2 Tablespoons reserved sausage drippings
• 2 Tablespoon cornstarch
• 2 cups milk
• 2 Tablespoon Worcestershire sauce
• 3 cups chopped cooked turkey chicken may also be used
• 1 cup dried cranberries

Instructions

• Follow package directions to prepare rice mix.
• In large skillet combine sausage, mushrooms, and celery. Cook over medium heat until browned. Reserve 2 tablespoons sausage drippings, drain the rest of the sausage.
• Add cornstarch to drippings in skillet. Stir till there are no lumps. Heat one minute on high stirring constantly. Gradually add milk and Worcestershire sauce. Cook over medium heat stirring constantly until thickened.
• Combine rice, sausage mixture, turkey, cranberries and sauce. Spoon mixture into a lightly greased oval baking dish.
• Bake, uncovered, at 375 degrees for 40 - 45 minutes.

Notes

May be covered and refrigerated for 2 days or frozen for two weeks. If frozen, thaw before baking.

Unlike her mother’s experience with pregnancy, she is experiencing morning sickness. When I asked her what sounds good to eat,her answer was…...Kraft Macaroni and Cheese. Not any Mac and Cheese, it has to be the Spiral shaped box. Oh, the things you can get away with when you are expecting! So this Thanksgiving we will be serving all the traditional holiday foods and…….. Spiral shaped Kraft Macaroni and Cheese. A new tradition is born (pun intended).

I haven’t gotten all of my holiday decorations done yet. But that is ok because what I have gotten done is this Lush and Sophisticated Garland that we pinned from Southern Living. I completed my garland last week because we were invited to participate in Design Dazzle’s 100 Days of Christmas Wonderful. Not only does it look amazing but my whole house smells like fresh pine! The best part is that isn’t hard to make, so let’s get started.

Supplies Needed

Scissors
Wire Cutters
Plastic to cover mantle – A small plastic drop cloth from Home Depot or Lowe’s will work fine
Floral Foam in Cage
Floral Wire

Plus these additional items:

A regular Garland like this from Hobby Lobby or other craft store.Sorghum type plant from Hobby Lobby. My store didn’t have Sorghum so I picked these up.  Close enough!

The original instructions called for Millet but none of my nurseries carried this so I purchased these bunches from Michael’s.Next up is some is to gather some Rose Hips. Mine were taken from the rose bushes in my back yard. I have 3 bushes which did not produce enough for this project. I called a friend and she was kind enough to allow me to cut some from her rose bushes.You will also want some Holly Berries which can be found at Michael’s Along with Magnolia leaves also purchased from Michaels.Pine cones and pine boughs will be a must and I just gathered these from my yard.And now it’s time to get this party started and start assembling!

Start by wrapping your mantle in plastic to protect it from getting wet.Next you are going to “soak” your floral foam in water. Fill your sink to the same height as your floral brick. Place your brick in the water. DO NOT push it down. Just  leave it floating as it will sink as it absorbs water. As the brick absorbs the water from the bottom, it pushes the air out from the top. If you push your brick down, the middle may seem wet but will actually remain dry. Let your brick soak for about 20 minutes. This is what the top will look like as it is absorbing the water. After 20 minutes place your floral brick in the floral cage. Place cages on  your mantle.Lay your store bought garland over the floral cages. Now the fun really begins! Start by adding your pine boughs in by sticking them into the wet floral foam. I started in the front and then worked on filling in the back. I alternated with the two different types of pine.  When attaching to the side of the garland, use your wire cutter to cut your floral wire.  Attach the wire to the piece you are adding and then wire it in to the sides of the store bought garland.Next I added the Rose Hips. I wasn’t sure that these would add very much to the garland. They turned out to be my favorite. I love how they made it look! After the Rose Hips I added the magnolia leaves. The contrast is just stunning!OK, now I’m getting excited about how this is turning out! Up next is the “Sorghum” stalks. The faded red is the perfect tone.  I love the depth it provides.The last addition is the Millet and the Holly Berries. Millet  is not an item I would have ever thought of using, but the different color and texture makes it look fantastic. After some final “tweeking” here and there, I finally finished. I LOVE the results. “Lush “and “sophisticated “are very accurate descriptions of this garland. Oh, and did I mention how fantastic my house SMELLS? Heavenly with all the fresh pine!

If you are going to cut a fresh tree down for Christmas then get some extra pine and cedar to make your own garland. If not, you can find pine and cedar at Home Depot, Trader Joe’s, your local florist or any Christmas tree lot.
